Types of Cellulose in Food Products
While other cellulose formulations are certainly used, the three most common Cellulosics used in food are methyl cellulose (MC), hydroxypropyl methylcellulose (HPMC), and carboxymethyl Cellulose (CMC). Tilley offers technical support to create the ideal formulation to improve existing products or line extensions utilizing these components.
Cellulose food ingredients are often used as non-caloric bulking agents, especially in low-fat or reduced-calorie products.
Methyl Cellulose (MC)
MC is non-ionic and cold-water soluble. It has excellent thermal gelling qualities. It is used as a thickener and emulsifier, particularly in baked goods and sauces.
Hydroxypropyl Methylcellulose (HPMC)
HPMC is hot- and cold-water soluble and has superior film-forming characteristics. Like MC, HPMC is used in sauces and bakery items.
Carboxymethyl Cellulose Gum (CMC)
The term “cellulose gum” typically refers to CMC, which is highly water-soluble and anionic. CMC exhibits excellent thickening and stabilizing properties and is frequently used in dairy products like ice cream and yogurt, among other applications.
Cellulose Gum Food Applications
Few ingredients are as versatile as cellulose. In food and beverage applications, Cellulose is widely used to add fiber, thicken and stabilize, and improve mouth feel. Manufacturers use Cellulose as an ingredient in consumer favorites like:
- Baked goods and cereals
- Dairy products
- Dressings and sauces
- Drink mixes
- Energy gels
- Shredded cheese
- Spice mixes
- Syrups
